As someone who has long loved Kew Gardens, it was very special indeed to edit The Kew Gardens Cookbook.
The Kew Gardens Cookbook is a collection of over 60 vegetarian recipes donated by leading chefs and food writers in support of Kew, among them Ken Hom, Rachel Roddy, Raymond Blanc, Diana Henry, Meera Sodha and Claudia Roden. Published by Kew Publishing, proceeds from the cookbook’s sales go to Kew to fund its vital work conserving and researching biodiversity.
The book is full of wonderful ideas for how to cook with plants and fungi – From herbs and spices which add an intense burst of flavour, leaves used as edible wrappers, roots and grains added to cakes and tarts or flower petals used to add fragrance to a beautiful fruit-based jelly.
